Coryfo is the signature Greek gastrotaverna of Sentido Apollo Palace, inspired by the twin peaks of Corfu’s Old Fortress — the same “koryphō” that gave the island its Italian name, Corfù. Nestled within the lush grounds of the resort and just minutes from the sea, Coryfo offers a culinary experience that blends tradition, landscape, and contemporary Greek cuisine in an atmosphere of effortless elegance. 

Philosophy & Cuisine

Coryfo pays homage to the rich culinary heritage of Corfu and Greece, reinterpreted through a modern, creative lens. Every dish is crafted using fresh, local ingredients — many sourced directly from the Apollo Palace Organic Farm — and showcases a deep respect for authenticity, sustainability, and seasonality. 

The menu reimagines classic recipes with a refined twist, featuring dishes such as: 

  • Beef cheek braised in the style of a traditional Corfiot sofrito, 
  • Corfiot bourdeto giouvetsi with seafood "stones" and handmade manestra pasta, 
  • Free-range cockerel with traditional Mista pasta and mushrooms, 
  • and the beloved pastitsada, transformed into a rich spiced sauce over slow-roasted organic chicken breast. 

Desserts highlight the island’s sweet legacy, from caramelised tsoureki with Greek coffee ice cream, to cannolo with kumquat gelato and cardamom-scented white chocolate.

Culinary Direction

The creative direction of Coryfo is entrusted to Ettore Botrini, one of the most acclaimed chefs in the Mediterranean, internationally recognized and awarded a Michelin star. With roots in both Italy and Corfu, Botrini is known for transforming local memories into innovative and emotionally resonant dishes. His involvement at Coryfo brings technical excellence and imaginative depth to a cuisine rooted in identity.

The Team

The philosophy of Coryfo is brought to life daily under the guidance of Executive Chef Asterios Kiriakos, a respected figure in modern Greek gastronomy with extensive experience in both Greece and abroad. His culinary leadership ensures the consistency, elegance, and authenticity that define the dining experience at the resort. 

In the kitchen, Chef Dimitris Trapkos, a young and talented rising star, brings passion and precision to the execution of each dish. With a fresh perspective and a deep respect for tradition, he leads the culinary team in delivering a vibrant, contemporary interpretation of Corfiot cuisine.
